Blogmas- Day 19

Hi everyone today I am going to be sharing another holiday recipe, Mini Gingerbread men! These are so cute and very yummy. I made these with my little cousin the other day and she loved doing it. These mini gingerbread men would be perfect for a party or just a cosy winter night. I will definitely be making these on Christmas Eve and wrap them up really nice and hand them out to my family. Let’s get into the recipe <3

Makes: 12-16
Ingredients
3 cups/350g all purpose (plain) flour, plus extra for dusting
1 tsp baking soda (bicarbonate of soda)
1 tsp ground ginger
1 stick/115g unsalted butter, plus extra for greasing
¾ cup packed/175g light brown (demerara) sugar
4 tbsp corn (golden) syrup
1 egg, beaten
Currants and ribbon, to decorate

Method
1. Preheat the oven to 375 F/190 C/Gas mark 5. Lightly grease three large baking sheets. Put the flour, baking soda and ginger into a bowl, then rub in the butter until the mixture resembles breadcrumbs.
2. Stir in the sugar, then add the syrup and the egg to the mixture. Mix to form a dough, kneading lightly with your hands.
3. Lightly flour your work surface and divide the dough in half. Roll out one half to a thickness of ¼ inch/5mm. Using a mini gingerbread man cutter, cut out the shapes and place them on the greased baking sheets. Decorate them by using currants for the eyes and buttons. Repeat using the other half of the dough.
4. Bake in the oven for 10-12 minutes, or until they are a dark golden colour. Leave the gingerbread men to cool slightly before transferring onto a cooling rack to cool completely. Tie ribbon bows around the gingerbread men to decorate.
*if you store in an airtight container, they keep for up to a week*
